Son Negre
Son Negre is only released onto the market in exceptional years when, at the end of the ageing period, a unique wine with a superior quality is achieved.   If it is not considered to meet the exacting criteria, it is used to make ÀN.

This wine is the result of the collaboration with the painter and friend, Miquel Barceló, who has made an exclusive label for Son Negre.

Son Negre 2005 · Technical Datum
Grape Varieties: 95% Callet, 5% Manto negre and Fogoneu

Pruning: Traditional gobelet method.

Rainfall: 350-450mm

Origin: Originating from three small vineyards in the area of Son Negre, which are gently cooled by sea breezes. Density of fruit trees in half of the vineyard and extreme soil characteristics throughout; poor top soil, high mineral content and low water-retention. Ludicrously-low production of less than half a kilo of grapes per vine.

Production:
Grapes are harvested by hand into small 10kg boxes. Manual grape selection before temperature-controlled fermentation in 3,000 litre wooden vats.

Maceration: Average of 25 days.

Malolactic: In barrels.

Ageing: 17 months in new, French, fine-grain oak barrels; low to medium toasted. A further 2 months of tank aging prior to bottling.

Tasting Note
“Dark ruby/purple in color, it has an expressive perfume of pain grille, violets, tobacco, black cherry, and black raspberry that leaps from the glass. Superrich,layered, and very long, it cleverly conceals enough tannin to support 3-5 years of evolution in the bottle. It should show its best stuff by 2015 and drink well through 2025.”
